Herbed Lemon Potatoes Recipe
This recipe is a favorite of ours! The lemon makes the potatoes outrageously delicious and the added herbs supports health and adds to the mouthwatering taste.
Ingredients:
3-4 lbs of Yukon potatoes
½ cup of Extra Virgin olive oil
1 tablespoon Dijon mustard
1 cups of chicken broth or stock (if needed use more)
4-5 gloves garlic (optional)
½ cup of lemon juice (adjusted the lemon to your taste)
1 teaspoon dried oregano
2 teaspoon dried basil
1 teaspoon dried rosemary
1 teaspoon dried thyme
Salt and pepper to taste
* You can use fresh herbs
Preheat oven to 400 degrees
Peel and cut the potatoes in 4 pieces
Spread the potatoes in an even layer on a baking pan or sheet and add salt and pepper.
In a bowl mix the olive oil, Dijon mustard, chicken broth, lemon juice and all the herbs.
Pour the mix over the potatoes and mix them around until they are well coated.
Layer the potatoes evenly on the baking pan or sheet and cover with foil.
Roast in a preheated oven for 20 minutes and then remove the foil.
After 30-35 minutes, use a spatula and turn the potatoes over and bake another 30-35 minutes.

Makes 6 servings.
You can add chicken legs, thighs or breast into this recipe.
