Cucumber-Dill Tzatziki Recipe

This fresh tzatziki recipe will liven up any dish! Rich, creamy & full of fresh herbs, it's delicious on pita, grilled veggies, sandwiches, and more!

Ingredients:

  • 1 1/2 cup of Greek yogurt (you can use fat free or 2%)

  • 1 cups of cucumbers grated with the large holes of the box grater

  • 2 cloves of garlic minced

  • 2 tablespoons of extra virgin olive oil

  • 1 tablespoons of minced dill, extra for garnish

  • 1 tablespoon of white vinegar or lemon juice

  • ½ teaspoon sea salt  

  • Pepper

Instructions:

  1. Squeeze the cucumber with your balms over the sink till you remove all the excess moisture from the cucumber and place it in a mixing bowl. Repeat the process till all the cucumbers are squeezed.

  2. Add all the ingredients to the mixing bowl.

  3. Stir and blend well.

  4. Let it sit for 5 minutes and then taste. If needed you can add more fresh dill, white vinegar or salt to adjust to your taste.

  5. Cover tightly and refrigerate for 1 hour and then serve.

  6. It can be stored in the refrigerator for up to 4 days.

  7. Great with toasted pita bread.

Makes 2 cups.

Note: for a vegan Tzatziki you can make this with coconut milk yogurt instead of Greek yogurt.
