Orzo Herb Salad Recipe
This orzo salad is full of fresh herbs and exploding with flavor!
Ingredients
12 oz of Orzo uncooked
1 cup of thawed corn or grilled corn
1 cup of cherry tomatoes half cut
1 cucumber diced
1 cup of arugula or spinach
2 green onions thinly sliced (white& green parts)
1 small red onion diced
2 bunches of fresh basil chopped
2 bunches of fresh mint or parsley
1-2 lemons
Salt and pepper to your taste
Optional: ½ cup of crumbled feta cheese
Directions
Cook orzo as the package instructions.
Drain the orzo and rinse with cold water until the orzo is chilled and then transfer the orzo to a mixing bowl.
Add the remaining ingredients in the mixing bowl and the cheese if is desired. Toss until is evenly combined.
Add salt and pepper to your taste.
If you like the salad lemony add extra lemon.
You can serve immediately. Or cover it and put in the refrigerator for a few hours or overnight so the flavors will blend together.
