Creamy Burdock Root & Mushroom Sauce Recipe
Ingredients:
4 Tbsp olive oil or ghee
1 large onion chopped
2 cups cremini or shitake mushrooms finely chopped
3 garlic cloves chopped
3 Burdock root peeled and finely chopped
2 tbsp dry thyme
1 tbsp apple cider vinegar
Salt
Pepper
water if needed
Directions:
In a deep skillet, heat oil in low to medium heat, add onions and saute until translucent about 5 minutes
Add the cremini or shitake mushrooms, garlic, Burdock root, thyme, apple cider vinegar, salt, pepper and mix well.
Cover the skillet and reduce the heat to medium low.
Check the skillet every 5 minutes and stir the sauce.
Add water if needed.
When the sauce has reached a smooth consistency, remove from heat.
Cooks on or about 20 minutes.
You can use the Burdock mushroom sauce with fish, chicken, whole grain sourdough toast, rice and with other grains.
