Fresh Rosehip Syrup Recipe [Picture Guide]

In the Northeast, Rosehips are ripe for picking in late August found mostly along sandy beaches and dunes. They arrive just in time for the back-to-school, cooler fall weather which brings runny noses and colds.

Rosehip syrup is a delicious way to take rosehips throughout the fall and winter months to boost your immune system and ward off cold and flu. Just an ounce a day will do the trick.

I have used this rosehip recipe for many years and each year I have to make more and more as friends now ask for it to help with the cold and flu season!

TOOLS

  • Large pot

  • Food processor or blender

  • Mesh strainer

  • Slotted spoon

  • Glass jars

INGREDIENTS

This recipe is in 'parts' because it depends on how many Rosehips you pick. The measurments do not have to be exact to make a delicious, healthy Rosehip syrup!

  • 2 parts fresh Rosehips

  • 3 parts filtered water

  • Sweetener of choice - raw honey, sugar, brown sugar

  • Spices - cinnamon (+ other spices you enjoy - clove, nutmeg etc.)

DIRECTIONS

  1. Clean rosehips thoroughly by removing stems and leaves and running under water.

  2. Add water to pot.

  3. Chop rosehips in food processor until they're mashed up and immediately add them to the pot with water (cover rosehips completely).

  4. Bring to a boil, then simmer until half the amount of liquid remains

  5. While simmering, use a slotted spoon to remove the seeds that float to the top.

  6. Pour rosehips and liquid into a mesh strainer to strain out the liquid.

  7. Allow the rosehip liquid to drip through then gently press to extract as much liquid as possible.

  8. Set liquid aside.

  9. Put the starined rosehips back into the pot and add more water, repeat steps 4-7.

  10. Combine both rosehip liquid extractions in a pot.

  11. Warm and add sweetener and cinnamon (plus any other spices you'd like) to dissolve.

  12. Taste and adjust sweetness and spices.

  13. Pour rosehip syrup into hot, sterilized jars.

  14. Let sit for 15 minutes, then cover jar.

  15. Label each jar with the the name of the syrup, date, and ingredients.

  16. Store in cool dry place.

  17. Once a jar is opened, store it in the refrigerator.
