Almond Butter Coconut Sugar Cookies
These cookies are lightly sweet, fantastically delicious and best of all contain health promoting almond butter. The constituents found in almonds can help the body regulate blood sugar, support brain and muscle function, enhance bone health and increase energy levels. Ingredients
1/2 cup Almond Butter
1/4 cup butter, softened
3/4 cup coconut sugar
1 large egg
1 cup organic flour
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1/4 cup sliced almonds
Instructions
Preheat oven to 375°F.
With a hand mixer, beat almond butter, butter and coconut sugar in medium bowl on medium-high speed until creamy.
Beat in egg. Add flour, baking soda, salt, vanilla and almond extract. Beat until smooth.
Form balls using 1 tablespoon dough.
Place 2 inches apart on baking sheet.
Press a few almond slices on top of each cookie.
BAKE 7 to 9 minutes or until light golden brown.
Cool on pan 1 minute. Remove to wire rack to cool completely.
